Smaller version of the soup is as follows, approximately lol HEARTY TURKEY BARLEY SOUP
2-3 cups of turkey pc’s left over from Christmas
2 cups of water
4 cups of chicken/turkey broth or equal of water with bouillon cubes
28 oz tin of diced tomatos
10 oz tin of tomato soup (no extra water needed)
3 celery stalks diced
1 med/lge onion diced
3 carrots sliced
½ bag of spinach
8 T barley
½ t thyme
1 bay leaf
Clove or so of garlic
Extra chicken bouillon cubes if needed for flavour
Toss all of above in a pot and simmer until veggies are tendor and the barley is cooked. The barley when cooked will thicken and give a nice consistency to the soup.
